It appears in Geoffrey Chaucer's Miller's Tale, where the scholar Nicholas sings it in Latin to the accompaniment of his psaltery:

And over all there lay a psaltery

"Turkey in the Straw" is a fun tune and perhaps it was chosen to reflect the fun American character of Bob Johnson as being the turkey after he slept in the straw (bed of Queen Elizabeth 1st) in the Hand of Glory:

When Bob Johnson visited Canterbury Cathedral he admired the architecture and then softly said, "And my dad's pa built the First Baptist Church in Johnson County, Oregon redcedar, cedar shingles, 1887, well that was a good job, too." The song Bob sang to himself in the Hand of Glory is fitting considering his American roots.

"Onward Christian Soldiers" is played by Peter Gibbs in Canterbury Cathedral at the end of the movie. The same hymn is just as appropriate for this present troubled world:
